Zucchini peanut butter oatmeal

Zoats – oats with zucchini is a healthy and filling breakfast and a great way to start a day with a portion of veggies!

Ingredients:

  • cup of oats
  • 1/2 cup of grated zucchini
  • cup of plant milk
  • 1/2 cup water
  • portion of protein powder of choice
  • 1tsp grated flax seed
  • chopped dates or sirup for sweetness
  • toppings of choice: fruits, nuts, seeds

I used Nutty Nutty peanut protein powder from That Protein which is the best protein powder you can get! It’s 100% plant based, all natural and without additional sweeteners!

Method:
Bring all ingredients to the pot and cook on low heat until you reach the desire consistency.
Top it with your favorite fruits and nuts. I added banana as it goes perfect with PB. Also roasted peanuts, tahini and cocoa nibs.
