Zoats – oats with zucchini is a healthy and filling breakfast and a great way to start a day with a portion of veggies!
- cup of oats
- 1/2 cup of grated zucchini
- cup of plant milk
- 1/2 cup water
- portion of protein powder of choice
- 1tsp grated flax seed
- chopped dates or sirup for sweetness
- toppings of choice: fruits, nuts, seeds

Bring all ingredients to the pot and cook on low heat until you reach the desire consistency.
Top it with your favorite fruits and nuts. I added banana as it goes perfect with PB. Also roasted peanuts, tahini and cocoa nibs.
