Easy no waste rice salad. Rice can be replaced with quinoa, buckwheat or any favorite grain.
Ingredients:
- 1/2 cup cooked rice
- few broccoli florets
- 1/2 cup cooked green beans
- 1/2 cup roasted pumpkin
- 1 cup fresh spinach
- lentil sprouts
- toasted pumpkin seeds
- olive oil
- lemon juice
- salt, pepper
- garlic powder
- oregano
- chili flakes
Method:
Mix all veggies with rice in a bowl. In separate dish combine olive oil with lemon juice and spices. Stir and pour over the salad. Mix together and transfer to the serving bowl. Sprinkle with toasted pumpkin seeds.
