Mushroom and red beans burgers

Veggie patties made with red kidney beans, mushrooms and rice.

Ingredients:

  • 1 can of red kidney beans (250g)
  • 200 g mushrooms
  • 80 g cooked rice
  • 1 onion
  • 2 cloves of garlic
  • 2 chilies
  • 30 g oats
  • 1 flax egg
  • 2 tbsp tomato paste
  • 2 tsp liquid smoke
  • 2 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp cumin
  • salt, pepper

Method:

Prepare and cut the onion, garlic, chili and mushrooms. Heat up some oil in the pan and fry all together.
Prepare the flax egg and let it rest for few minutes.
Combine all ingredients in the food processor. Try the mixture and adjust the taste.
Move it to the fridge for 40 minutes, and then shape the patties.
Place them on the baking tray covered with parchment paper and bake in 200C for 30-40 min – flipping on the other side after 15-20 min.


***The mixture is quite soft – you can add more oats for more firm burgers or if you want to fry them in the pan.
