Baked coconut oatmeal with rhubarb and strawberries

Rhubarb and strawberries with coconut twist!

(2 portions)

  • 1 rhubarb stick
  • 1 cup strawberries
  • 1tsp coconut sugar
  • 1tbsp flour
  • 70g oats
  • 30g coconut flour
  • 1 tsp baking powder
  • 100ml almond milk
  • 30ml canned coconut milk
  • 2 tsp ground flax seeds
  • pinch of salt
  • 1tbsp rice syrup
  • 2tbsp coconut oil
  • shredded coconut

Cut the rhubarb and place it in the lightly greased baking dishes. Add sliced strawberries, sugar and flour. Mix together.
In a small bowl combine oats, coconut flour and baking powder.
In another bowl mix almond milk, coconut milk, oil, syrup of choice and flax seeds. Whisk together and transfer on top of fruits. Sprinkle with shredder coconut. Bake in 190C up to 20 min until golden brown.
