White beans and mushroom burgers

Simple burger patties with beans and dried mushrooms. This recipe can help you cook with what you have in your cupboard.

Ingredients:

  • 2 handfuls of dried mushrooms (I used ear and shiitake mushrooms)
  • 1 onion
  • 1 garlic clove
  • 100 g white beans (300 g cooked beans)
  • few leafs of kale
  • fresh parsley
  • 1 tbsp chickpea flour
  • 1 tbsp olive oil
  • cumin, salt, pepper, garlic powder.

Method:

Soak the beans for 8 hours or overnight. Cook on low heat until soft (it can take up to 45 min, always check if not to soft). You can also use canned beans. I used around 300-350 cooked beans.

Add mushrooms to the bowl with warm water, let it soak for half hour.
If you use fresh mushrooms instead of dry you can add them in the next step.

Heat up oil in the pan, add chopped onion and garlic. At this point you can add your mushrooms if using fresh. Fry until golden.
In food processor combine beans, soaked mushrooms (without water), fired onion and start processing. Add kale, parsley chickpea flour, 1 tbsp olive oil and spices. Process again until nicely combined.

Bake in 200 C for 30 minutes, flipping on the other side halfway.
