Zucchini noodles

Healthier alternative to traditional pasta. Quick and light lunch base idea. Just add more veggies and protein to have a fulfilling lunch!

Ingredients:

  • 1 zucchini
  • 1 tbsp pesto
  • toasted seeds such as pumpkin, sunflower, sesame
  • salt
  • chili flakes

Method:

Wash your zucchini and make your pasta with spiralizer. If you don’t have it you can also use a peeler and make wider noddles type.
Combine with pesto – I used homemade wild garlic and sunflower seeds pesto.
You can eat the noodles cold or heat them up a bit on the pan. Don’t keep them too long as they will be too soft.
You can add any veggies and proteins you have in your fridge to have a nutritious lunch or have it simple sprinkled with toasted seeds, salt and chili flakes.
