Champorado – chocolate rice porridge

Delicious Champorado – chocolate rice porridge from Philippine cuisine. Once you try it, you will never look at rice the same way anymore.

Ingredients for 1 serving:

  • 1 cup cooked sweet rice*
  • 1 cup coconut milk
  • 2 tsp cocoa powder
  • few pieces of dark chocolate
  • pinch of salt
  • few chopped dates or 1 tsp sugar

Method:

Combine all ingredients in the pot and cook on medium heat. If you use already cooked rice like me, there is no need for long cooking, just to thicken the pudding.
Serve with additional coconut milk, sprinkled with more dark chocolate.

*To cook the rice you need to soak sweet rice for 4 hours or overnight. Then rinse it and steam for about 30 minutes.
