Chocolate buckwheat pancakes

Very chocolatey pancakes for lazy weekend mornings.

Ingredients:

  • 1 chia egg
  • 3 tbsp buckwheat flour
  • 2 tbsp buckwheat flakes
  • 2 tsp cocoa powder
  • 1 tsp baking powder
  • 1 tsp maca powder (optional)
  • 130-150ml almond milk
  • chocolate chips

Method:

Prepare chia egg by mixing 1 tbps chia seeds plus 2 tbsp of water and set aside. In other bowl mix all dry ingredients. Add milk and chia seeds and combine together. Gently stir in chocolate chips. Fry on medium heat flipping on the other side when you see the bubbles.

I served my pancakes with homemade plum nutella spread, coconut yogurt and frozen blackcurrants.
