Quinoa pancakes with carob spread

I like to experiment with different flour types especially if you can get a flour from a very healthy grain which is full of healthy proteins! Serving these quinoa pancakes with quick and easy carob spread!

Ingredients:

  • 60 g quinoa flour
  • 1 tsp ground flax seeds mixed with 2 tbsp warm water
  • 1 tsp coconut sugar
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 115 ml water or plant milk

    Carob spread
  • 2 tbsp carob
  • 1 tbsp chocolate protein powder
  • warm water or plant milk

Method:

Prepare the flax egg by combining ground flax seeds with water. Set aside. Mix all dry ingredients in the bowl. Add water (or milk) to the flax egg and whisk together. Combine the mixture with dry ingredients. Fry the pancakes on medium heat until golden.

While the pancakes are frying combine the carob spread ingredients. Spread it on top of your pancakes. Serve with favorite fruits.
