
Here is a quick quinoa salad recipe. I found quinoa to be perfect for salads!
Ingredients:
- 1/2 cup black and red cooked quinoa
- 1 cup of yellow beans, cooked
- 1/2 cup black lentils
- mix of green leaves
- handful of roasted tomatoes
- mung beans sprouts
- pecan nuts
- 1 tbsp olive oil
- sesame salt
- chili flakes
Method:
Mix all ingredients together. Add a tablespoon of good quality olive oil. Sprinkle with salt – i use sesame salt (roasted sesame seeds blended with salt) and chili flakes. Enjoy!
