Quinoa salad

Here is a quick quinoa salad recipe. I found quinoa to be perfect for salads!

Ingredients:

  • 1/2 cup black and red cooked quinoa
  • 1 cup of yellow beans, cooked
  • 1/2 cup black lentils
  • mix of green leaves
  • handful of roasted tomatoes
  • mung beans sprouts
  • pecan nuts
  • 1 tbsp olive oil
  • sesame salt
  • chili flakes

Method:

Mix all ingredients together. Add a tablespoon of good quality olive oil. Sprinkle with salt – i use sesame salt (roasted sesame seeds blended with salt) and chili flakes. Enjoy!
