Classic cinnamon pancakes

Weekends are reserved for pancakes! I like to make simple spelt pancakes splashed with coconut yogurt, coconut flakes, dates syrup and fruits.


  • 50 g spelt flour
  • 100 ml plant milk
  • 1 tbsp apple cider vinegar
  • 1 flax egg
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp maca powder (optional)
  • pinch of salt

Combine apple cider vinegar with plant milk and set aside. Prepare flax egg by mixing 1 tbsp of ground flax seeds with 2 tbsp of water. In second bowl combine dry ingredients then add milk mixture and flax egg. Whisk together, add more milk if needed. Fry on medium heat until golden.
Serve with favorite toppings.
