Curried chickpea & leek salad sandwich

This salad is one of my favorite. Tastes great on its own or as a base for lunch sandwiches.


  • 1 leek
  • 1 and 1/2 cup chickpeas
  • 3 tbsp vegan mayonnaise
  • 1 tsp curry powder
  • 1 tbsp nutritional yeasts
  • 1 tsp kala namak salt
  • pepper
  • chili flakes (optional)


Slice the white part of the leek and put into a bowl. Mash the chickpeas with a fork. It doesn’t need to be perfect. You can leave big chunks. Add the chickpeas, mayonnaise and rest of the ingredients to the bowl. Combine together, taste and adjust the flavor if needed. Store in refrigerator.
