Red cabbage curry

You can make curry on so many ways. Usually I use whatever veggies I have in my fridge. This time I combined cabbage with beans and this type of curry landed on my often made type of meals. I call eat Poland meets Thailand curry!

Ingredients:

  • 1 tbsp coconut oil
  • 1 onion
  • 1 medium sized white cabbage
  • 300 g cooked white beans (approx 1 1/2 can)
  • 2 tbsp red thai curry paste
  • 1 can coconut milk
  • 1/2 – 1 cup of water
  • 1 tsp sugar
  • addition chili flakes
  • rice and fresh coriander for serving

Method:

Chop the onion and cabbage. Heat up coconut oil in a big pan, add veggies and fry for few minutes. Move to the side, add curry paste and let it fry a bit. Add coconut milk and cup of water, stir and cover with a lid. Cook for about 20-30 minutes until cabbage is cooked. When ready, add your beans and season with sugar and chili.
While your curry is cooking prepare your rice.
I ate my curry with brown rice and a handful of coriander.
