Chickpea Moroccan tajine

I brought this tajine from Morocco which is so great to make some slow cooked veggies. Here’s a simple ras el hanout veggies recipe.

Ingredients:

  • 1 aubergine
  • 1 onion
  • 1/2 can chickpeas
  • 1 can tomatoes
  • 2 garlic cloves
  • 2 tbsp Ras el Hanout spice mix
  • salt and pepper

Method:

Cut the aubergine into small pieces, slice the onion and chop the garlic. Blend tomatoes and mix together in a bowl with the rest of ingredients. Transfer to the tajine and set on the gas stove or in the oven. Cook until the aubergine is soft, adding some veggie stock if needed. Serve with a generous amount of fresh coriander and couscous, rice or millet.
