Sticky rice and mango is one of my favorite food i felt in love with in Thailand! It’s an amazing dessert but I love to have it as breakfast.
- 100 g sticky rice
- 200 ml canned coconut milk
- 3 tbsp sugar
- 1/4 tsp salt
- 15 g chia seeds
- 1 tbsp shredded coconut
- 150 ml coconut milk
- 1 mango
Soak the rice overnight or at least 4 hours.
Mix chia seeds and shredded coconut with coconut milk and refrigerate for at least 4 hours (or overnight). You can add sweetener of choice if needed.
Drain the rice and steam for 30 minutes.
Heat up coconut milk together with sugar and salt.
Add your rice and cook for 10 minutes. Transfer to the serving bowls.
Top up with coconut chia pudding. Slice your mango and top up your dessert.
Sprinkle with dried yellow mung beans and enjoy!
