Carrot cake with lots of cinnamon and maple icing.
- 190 g spelt flour
- 150 g grated carrot
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 15 g ground flax seeds
- 75 g brown sugar
- 2 tsp cinnamon
- 175 ml aquafaba
- 4 tbsp vegan cream cheese
- 3 tsp maple syrup
Preheat the oven to 180 C. Grease the baking pan with oil and set aside.
Grate the carrot and put it into a bowl. Add flour and rest of dry ingredients.
In separate bowl beat the aquafaba. It should be thick and stick to the bowl (like egg whites). Mix aquafaba with the rest of ingredients.
Transfer to the baking pan and bake for 25-30 minutes.
Once the cake cools down mix cream cheese with maple syrup and spread it on top of the cake. Dust the top with cinnamon.
