Miso & tahini tagliatelle

Tagliatelle pasta with my favorite beans and creamy miso and tahini sauce.

Ingredients:

  • 1 garlic clove
  • few cherry tomatoes
  • few sundried tomatoes
  • 1/2 cup broad beans
  • few steamed broccoli florets
  • 1 tbsp white miso paste
  • 1 tbsp tahini
  • 3 tbsp coconut milk
  • 60 g tagliatelle pasta

Method:

Cook your pasta as per package instructions. I used wholegrain tagliatelle. Heat up one garlic clove, few cherry tomatoes and sundried tomatoes in a pan. Add cooked broad beans, broccoli florets. Mix together. In small bowl combine 1 tbsp of white miso paste with 1 tbsp tahini and 3 tbsp of coconut milk. Add pasta and a bit of water (from cooking pasta) to the pan and turn off the stove. Pour the sauce and mix together. Sprinkle with chili flakes. Serve immediately and enjoy.
