One pot mushroom pasta

One pot meals are the ultimate comfort food. Especially combined with pasta and side piece of bread.


  • 1 tbsp oil
  • 500 g oyster mushrooms
  • 1 onion
  • 2 garlic cloves
  • 1 carrot
  • 1 zucchini
  • 1 red bell pepper
  • 150 g red kidney beans
  • 150 g chickpeas
  • 1 can of tomatoes
  • 2 tsp dried oregano
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili flakes
  • salt, pepper
  • 150 g dried pasta such as rigatoni


Heat up oil in a big pan. Chop the onion and garlic and add to the pot.
Wash and cut oyster mushrooms. Add to the pot and fry string occasionally.
Meanwhile cut the carrot, zucchini and pepper. Once the mushrooms are cooked add your veggies and tomatoes. Bring to the boil and cook for 5-10 minutes. Add herbs and spices. Then add beans and chickpeas.
Add 1-2 cups of water and dry pasta. Cook until your pasta will be al dente.
