Stuffed spaghetti squash

Spaghetti squash is so versatile. You can make a spaghetti with bolognese sauce, you can use it as a base for stuffing, patties etc. Here i stuffed the whole squash!

Ingredients:

  • 100 g mushroom
  • 1 leek
  • 2 garlic cloves
  • 1 cup chickpeas
  • salt, pepper
  • smoked paprika
  • chili flakes
  • nutrition yeasts
  • fresh parsley

Method:

Preheat the oven to 200 C degrees. Cut the squash in half, drizzle with olive , sprinkle with salt and bake for 25-30 minutes until soft.
Cut the mushroom on smaller pieces. Chop garlic cloves and leek. Heat up 1 tbsp of oil in a pan and add above ingredients. Season with salt and pepper. Once cooked removed from the pan. Add chickpeas, smoked paprika, salt and pepper.
Remove the pumpkin from the oven and mash using a fork. Transfer 3/4 of the spaghetti to a bowl, add other ingredients, season with spices and nutrition yeasts. Add handful of chopped parsley.
Put back to the oven for additional 10 minutes. You can top it up with cheese and bake until it melts.
