Parsley root oatmeal

You probably wonder what is sticking out from my oatmeal bowl. These are parsley root chips. This vegetable is quiet sweet with delicate taste that why i decided to make a nice oatmeal with parsley! The taste is really nice and the chips on top gave it a nice crunch!

Ingredients:

  • 50 g oats
  • 1 parley root
  • 1 tsp chia seeds
  • 1 tsp ground flaxseed
  • 1/2 banana, chopped
  • 1 tbsp protein powder (optional)
  • 150 ml plant milk

Method:

Prepare few bigger pieces of parsley root with a peeler for the chips and grate the rest. Combine all ingredients in the sauce pan and cook on medium/ low heat until creamy.
Meanwhile add the bigger pieces of parsley to air fryer, sprinkle with cinnamon and cook on 140 C for 5 min.
Transfer oatmeal to a serving bowl, add favorite toppings and parsley chips. Enjoy!
