Mango lassi pudding

I know we cannot wait for all Christmas delicious cakes and cookies but let’s not forget about healthy options as well. I have prepared this light mango lassi puddings which you can enjoy as dessert or breakfast (as we love having desserts for breakfast, right?)

Ingredients:

  • 15 g chia seeds
  • 150 g coconut yogurt
  • 200 ml plant milk
  • 3 tbsp mango powder
  • pinch of cardamom

Method:

Blend chia seeds into powder and mix with rest of ingredients. Transfer to two serving glasses and refrigerate for few hours. Top up with favorite fruits. I used frozen red currants and pomegranate.
