
Recently bought nasi goreng spice mix and decided to make a fried rice. I used brown rice and served it with roasted pak choy on the side. This is another quick lunch or dinner option.
Ingredients:
- 1 cm ginger piece
- 1 garlic clove
- 1 shallot
- 2 tsp nasi goreng spice mix
- 1 tbsp soy sauce
- 2 tbps lemon juice
- 1/2 red pepper
- piece of zucchini
- 1/4 cup frozen green peas
- 1/3 cup cooked rice
- 1/3 cup cooked lentils
- few cashews
- salt, pepper and chili
- fresh coriander
Method:
Heat up a pan and dry roast the cashews. Set aside. Slice the shallot, garlic and ginger. Heat up a bit of oil in the pan, add the above and fry on medium heat stirring for 2 minutes. Cut peppers and zucchini. Add nasi goreng spice mix to the pan as well as pepper, zucchini and green peas. Stir few minutes then add lentils and rice. Season with soy sauce, lemon juice, salt, pepper and chili. Serve sprinkled with green onion, coriander and roasted cashews.
