Blueberry muffin

Eat the blues before it gets to you!

Ingredients (for a single serve muffin):

  • 15 g buckwheat flour
  • 20 g vanilla protein powder
  • 1 tsp ground flax seeds
  • 1/2 tsp baking powder
  • 1/2 banana, mashed
  • 80 ml plant milk
  • 1 tsp coconut oil
  • 1 tsp coconut milk

Method:

Mix all ingredients in a bowl, transfer to a muffin pan. Air fry for 30 min in 180C.
For the frosting melt 2 pieces of white chocolate with 1 tsp coconut milk and 1/2 tsp blue spirulina powder. Decorate with blueberries.
