Black beans and sausage stew

Warm and comforting. This stew will fill you up for good hours. Serve it with rice, quinoa or even a piece of bread.

Ingredients:

  • 150 g dry black beans
  • handful of dried mushrooms
  • 1 onion
  • 2 garlic cloves
  • 2 large carrots
  • 1 celery stalk
  • 2 red bell peppers
  • 1 can of tomatoes
  • 1 cup of water
  • 150 g vegan sausage
  • 2 cups of kale
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tbsp liquid smoke
  • 1 tsp chili flakes
  • salt, pepper

Method:

Soak the beans overnight. On the next day cook until soft for 30-40 min. Cover dried mushrooms with warm water and let it soak for 15 minutes.
Prepare the veggies: cut the onion and garlic in small pieces. Wash and slice carrot, celery and pepper.
Heat up the pan, add sliced vegan sausage and fry it until it will get crispier. Set aside.
Add garlic and onion to the same pan. Cook 2 minutes, then add carrots, celery, peppers and mushrooms. Stir few minutes, add tomatoes and a cup of water. Season with spices and cook until veggies are soft.
Add beans, sausage and kale. Cook few more minutes. Serve with rice, quinoa or buckwheat.
