Carrot cake – single serve

Carrot is the new black! Single serve carrot cake with plant based protein.


  • 30 g spelt flour
  • 1 tbsp protein powder*
  • 30 g grated carrot
  • 1 tsp coconut oil
  • 1 tbsp maple syrup
  • 50 ml plant milk
  • 1 chopped medjool date
  • 1 tsp pumpkin spice mix
  • 3/4 tsp baking powder


Mix all ingredients in one bowl. Transfer to a muffin tin and bake in the oven or air fryer for 25 min in 180C.

*I used chia and pumpkin seed protein powder from That Protein
if you are not using this type replace it with 1 chia or flax egg (ground chia / flax seed mixed with water) .
