Vanilla and chocolate waffles

Vanilla and chocolate sourdough waffles. Because once you start making everything with sourdough, it’s hard to stop.


  • 60 g almond flour
  • 40 g starch flour
  • 100 g spelt flour
  • 60 g sourdough starter (discard)
  • 1 mashed banana
  • 1 tbsp cocoa
  • 160 g plant milk or water
  • pinch of salt
  • few drops vanilla extract


Combine all ingredients except cocoa powder in a bowl. Mix well, split into two mason jars. Stir 1 tbsp cocoa powder into one jar. Keep the jars covered in room temperature for few hours or place into the fridge for the night. Be sure there is enough space in the jar because the dough will raise (almost double the size). Bake for 6 minutes in preheated waffle maker.
