
When I was living with my parents apple pie was one of our favorite treats. My mum was always making a classic apple pie but whenever I was in charge I was sneaking cocoa powder into the dough to make it chocolatey. It’s my favorite way of having apple cake! I made this pie just before Christmas and I added extra gingerbread spice which I love during winter season!
Ingredients:
- 180 g flour
- 100 g butter
- 3 tbsp cold water
- 40 g sugar
- 20 g cocoa powder
- 2 tsp gingerbread spice
- 1 tsp cinnamon
- pinch of salt
- 7 apples
- 2 tbsp sugar
- cinnamon
Method:
Wash and peal the apples. Cut on small pieces, add to the pan and cook on low heat. You can add a splash of water so the apples won’t burn. Once soft add sugar and cinnamon and set aside to cool down.
Prepare the dough by combining flour, butter, sugar, salt, spices and water in food processor or quickly using your hands. It’s important not to kneel the dough for a long time to not make the crust hard. Once combined put it to a fridge for 30 min.
Take 3/4 of the dough and roll gently to get a thin layer. Place it at the bottom of greased pan, add the apples and cover with rest of dough. I made few stars using gingerbread form.
Bake for about 30 minutes in 190 C.
Cool down and sprinkle with icing sugar.
