Pancake tacos

If you ever feel like having your favorite breakfast in new way! Pancake tacos filled with peanut butter, coconut yogurt, homemade nutella and frozen fruits. How does it sound?

Ingredients:

  • 50 g buckwheat flour
  • 20 g millet flakes
  • 150 ml soy milk
  • 1 chia egg (1 tbsp ground chia seeds + 2 tbsp water)
  • 1/2 tsp cardamom
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • pinch of salt

Method:

In one bowl prepare the chia egg by mixing ground chia seeds with water. Set aside.
In second bowl combine all dry ingredients. Add water to chia egg, mix and pour into bowl with dry ingredients. Combine together and fry on medium heat until pancakes are golden.

Fill your pancake tacos with coconut yogurt, peanut butter, nutella or jam and top up with fruits.
