
When you cannot decide if you would rather have lasagne or a soup, make a lasagne soup!
Ingredients:
- 1 onion
- 200 g smoked tempeh
- 500 ml vegetable broth
- 1 can of tomatoes
- 4 sheets of lasagne pasta
- 1 tsp oregano
- 1 tsp smoked pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- salt, pepper, chili flakes
- cheese to top up
- fresh basil

Method:
Peel and chop the onion. Heat up a little bit of oil in a saucepan, add the onion and fry on medium heat. Grate the tempeh (it will be your mince meat). Add the tempeh to the onion and continue frying. Add hot veggie broth.
Blend the tomatoes and add to the saucepan. Bring to boil. Add the spices and stir.
Break lasagne sheets into smaller pieces and ad to the soup. Cook al dente.
Once the pasta is cooked, transfer your soup into serving bowls. Top up with grated cheese and fresh basil.
