Sweet potatoes with hoisin chickpeas

This sweet and sour combination will definitely surprise you. Good way of course! Tasty and easy lunch / dinner which can be ready in half hour.

Ingredients:

  • 1 garlic clove
  • 1/2 onion
  • 180g cooked chickpeas
  • 3 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1tbsp rice vinegar
  • 1 tsp liquid smoke
  • 1 tsp smoked paprika
  • 1/2 tsp chili – optional
  • 1/2 tbsp potato starch
  • 2 sweet potatoes

Method:

Wash and dry sweet potato and cook in air fryer for 30-40min in 180C. You can also bake them in the oven.
Heat up a sauce pan and saute chopped garlic and onion. Add chickpeas, sauces, smoked paprika and a splash of water. Cook few minutes on low heat. At the end stir potato starch to thicken the sauce.
Serve when potatoes are soft.
