Lentils and beets salad

Here is a simple salad idea for a quick lunch. I like to enjoy my salad with a bit of sweet touch from fresh or dried fruits.

Ingredients:

  • 1 baked beetroot
  • 1/2 cup cooked black lentils
  • few sundried tomatoes
  • handful of blueberries
  • 1 cup of spinach
  • pinch of salt
  • chili flakes
  • pumpkin seed butter
  • toasted pumpkin seeds

Method:

Combine all ingredients together and drizzled with pumpkin seed butter. Add more toasted seeds for extra crunch. Sprinkle with chili flakes and salt.
