Redcurrant oatmeal

Redcurrants and gooseberries are fruits of my childhood! My parents had buckets every season from the garden and my mum was always struggling to use all fruits and make jams, cakes or compotes from it. Today I eat it with sentiment and I think it’s a shame those fruits are not so popular and used these days.

Ingredients:

  • 1/2 cup of oats
  • 1 cup of plant milk
  • handful of recurrants
  • 1 tbsp vanilla protein powder (optional)
  • 1/2 mashed banana
  • 1 tsp flax seeds

Method:

Combine all ingredients in the pot and cook on low heat until creamy. Transfer to a bowl and top up with more redcurrants and other season fruits. Sprinkle with pumpkin seeds.
